Each week, Laura creates a new suggested menu to choose from, with a variety of protein-rich entrees and seasonal sides. Menus include gluten-free, dairy-free, and vegetarian options. Next week’s menu and sample menus are below.


Week of August 11 Menu

Green goddess soup (puree of spinach, pea, potato, herbs) 

Thai coconut curry tofu with veggies

Herbed chicken salad w peas, lemon, yogurt, scallion

Pasta with arugula-herb pesto, pine nuts & parmesan

Frittata with spinach, potato, caramelized onion, herbs, parmesan

Italian sausage and pepper stuffed zucchini boats, tomato, parmesan

Week of August 4 Menu

Watermelon Gazpacho

Miso-sesame glazed roast salmon, scallion, cucumber

Za’atar-Spiced Yogurt-Marinated Roast Chicken

Glazed pork chops, peaches & onion, pan gravy

Carrot, cauliflower and chickpea curry with tomato and coconut milk

Farro pilaf with arugula, cherries, pistachios, herbs

Fresh corn, bean & zucchini salad with onion, peppers, lime

Watermelon, cucumber & feta salad, red onion, mint, pistachio, lime
